Be sure eggs, butter, and bananas are at room temperature. If using frozen ripe bananas, thaw bananas overnight then let them come to room temperature.
- Butter – I love to regulate the amount of salt I use for baking, that is why I always use unsalted butter. Make sure the butter is at room temperature. You can use salted butter as well but don’t add extra salt to the dough.
- Brown sugar – adds more moisture and sweetness to the recipe. You can substitute it for granulated sugar.
- All-purpose flour – I used all-purpose flour.
- Eggs – are used to add structure to baked goods. You need 2 eggs at room temperature
- Bananas – the best is to have overripe bananas for banana bread. The darker the better (brown or black). Overripe bananas make your banana bread sweet and moist.
- Baking soda – a leavening agent to help the banana bread rise to tender, moist, and fluffy perfection.
- Salt – I used pure, fine sea salt. Adding a pinch of salt enhances the natural flavor of banana bread. It adds a nice balance to the sweetness of the banana bread.
- Peanut butter – use creamy peanut butter. You can beat the peanut butter before adding it to the batter so it can incorporate better into the mixture.
- Chocolate chips – you can use chocolate chips or chopped bar chocolate. Be aware that bar chocolate will melt more than chocolate chips.
- Vanilla extract – gives baked goods more taste. Choose a good quality vanilla extract, because that really makes a difference.
- Sour cream – adds moisture without thinning the cake batter, adding fat for creaminess, controlling browning, and activating baking soda. As a substitution, you can use buttermilk, creme fraîche, or Greek yogurt.

🔪 Step-by-step instructions

Step 1 – Preheat the oven
Preheat the conventional oven to 180℃ (356 °F). Grease the cake tin and place a piece of parchment paper in the cake tin.
Step 2 – Cream butter
Beat the unsalted butter in a mixing bowl with an electric mixer at a low speed, until it becomes soft and creamy. Gradually at the brown sugar and increase the speed (high speed) and continue beating until smooth and creamy.
TIP – If the butter is not at room temperature, you can also heat it for 30-60 seconds in the microwave, so that no lumps form in the mix (make sure that the butter doesn’t melt).
Step 3 – Add eggs
Add the eggs, room temperature, one by one into the creamed butter and mix them together briefly.
Step 4 – Wet ingredients
In a separate bowl, mix the peanut butter with a hand mixer until creamy.
Add the ripe bananas to the peanut butter and mash them with a fork to a puree (or put them in a food processor). Add the sour cream and vanilla extract. Mix with a hand mixer until combined. Stir this into the creamed butter and mix until combined.
Step 5 – Dry ingredients
Whisk the dry ingredients (flour, salt, cinnamon, and baking soda) together in a bowl. Stir the banana mixture into the dry ingredients with a rubber spatula until thoroughly combined. Stir in chocolate chips.
Step 6 – Bake the peanut butter banana bread
Spoon the mixture into the loaf pan and place it in the middle of a preheated oven at 180℃ (356 °F).
Wait about 40-50 minutes for the banana bread to be ready. Check the doneness of the cake with a wooden tooth stick. Insert a wooden toothpick near the center of the cake. If the toothpick comes out clean, the cake is done.
Step 7 – Cooldown
Cool the banana bread in the pan on a cooling rack for 15 minutes.
After 15 minutes remove the banana bread from the pan to cool down on a cooling rack. Slice the cake when it has completely cooled down.

- Room temperature ingredients – use butter and eggs at room temperature. If the butter is not at room temperature, you can also heat it in the microwave for 30-60 seconds, so that no lumps form in the mix.
- Chocolate topping – Avoid topping the batter with chocolate because it can burn as it bakes. Add some chocolate chips to the top when it comes out of the oven.
- Creamy peanut butter – mix the peanut butter before adding it to the batter so it will incorporate better with the mixture.
- Add nuts – add walnuts or cashews to enhance the nut flavor of the peanut butter. It also adds more texture to the banana bread.

Covered banana bread can be stored in the refrigerator for a maximum of 4 to 5 days. You can also freeze banana bread in an airtight container for about 3 months. Remove the banana bread from the freezer 24 hours before serving.

Make sure that the banana bread has completely cooled down before you cut it. The easiest way to cut banana bread is to dip a large chef’s knife in warm water and then dry it. This allows the warm knife to slice through the banana bread. Then repeat these steps every time you cut through the cake.
