Make it one day ahead and you only have to heat it up in the microwave. If you haven’t tried out baked oats before, this is the perfect time for you to try them out. In this recipe, we try out the Tiktok banana bread baked oats version.
You can also vary endlessly with this recipe. Add some other toppings and mix-ins and you have a varied breakfast every day. In this recipe, I added some extra banana and chocolate chips resulting in chocolate chip banana bread baked oats.
Baked Oats are healthy because only healthy ingredients are used to make this breakfast cake. This recipe is gluten-free and sugar-free. You can make the recipe vegan as well. If you swap the egg for a flax egg and use vegan milk and chocolate you get vegan banana bread baked oats.

🧁 Ingredient Notes & Substitutions
To make these banana bread baked oatmeal you will need the following ingredients. Some ingredients are optional.
- Banana – the best is to have overripe bananas for banana bread. The darker the better (brown or black). Overripe bananas make your banana bread sweet and moist.
- Rolled oats – base for the baked oats recipe. I recommend using rolled oats, but you can make it with rolled oats as well. The good news is that rolled oats are gluten-free.
- Milk – I used almond milk for this recipe, but you can use any milk.
- Eggs – are used to add structure to baked goods. I used 1 egg at room temperature. You can also leave out the egg or use a flax egg to make this dish vegan.
- Baking powder – helps the baked oats rise.
- Salt – optional. I used pure, fine sea salt. Adding a pinch of salt enhances the natural flavor of the baked oats. It adds a nice balance to the sweetness of the oats and bananas.
- Cinnamon powder – combines perfectly with banana and it gives the dish the banana bread taste.
- Vanilla extract or honey – is a natural sweetener, you can also use maple syrup.
- Chocolate – use chocolate chips or cut dark chocolate into small pieces. You can also add a chocolate piece in the middle of the baked oats for a melted inside.
- Cocao powder – optional, add some cocoa powder if you want to have chocolate banana bread oats.

🔪 Step-by-step instructions
Let’s walk through how to make baked oats. For full ingredients and instructions, scroll down to the recipe card.
Step 1 – Position an oven rack in the middle of the oven. Preheat the oven (conventional) to 175℃ / 350 °F. Grease a ramekin or oven-safe pan.
Step 2- Add all the ingredients into the blender / Nutribullet.
Step 3 – Blend everything together until everything is smooth and pourable.
Step 4 – Divide the mixture over to ramekins. Add extra toppings and/or mix-ins. I added some extra chocolate chips and pieces of banana. But you can add any topping, like nuts, fruits, lime juice, white chocolate, and funfetti.
Step 5 – Bake it in the middle of a preheated oven for about 20-25 minutes. Check the doneness of the baked oats with a wooden tooth stick. Insert a wooden toothpick near the center of the cake. If the toothpick comes out clean, the baked oats are done.
Step 6 – Melt some chocolate in a microwave bowl and add it on top of the baked oats. Decorate with some extra banana slices. Enjoy your banana bread baked oats!

Chocolate Banana Bread Baked Oats
Add one tablespoon of cacao powder to the blender and it will result in a chocolate banana bread baked oats. Add some extra chocolate chips as a mix-in. You can also add some extra hazelnuts or other nuts as well. Decorate it after baking with some melted chocolate on top.

- Don’t overbake – just like cakes, baked oats, will dry out if you bake them for too long in the oven.
- Toothpick test – check the doneness of the baked oats with a toothpick. Just like with a cake, you can check whether the baked oats are ready by pricking them with a skewer. When nothing sticks to it, it is done.
- Overripe bananas – use overripe bananas, they are the best for baking. They taste sweeter than regular bananas.
How long can you store baked oats?
The baked oats taste the best straight out of the oven when they are still warm and fresh! They can be stored out of the fridge in an airtight container for up to 2 days. But you can also store them in the fridge or freezer. The best is to heat them up again after storage in the microwave or oven.

You can store baked oats (after baking) in the fridge for up to 5 days in an airtight container.
Freezer
You can also freeze baked oats (before and after baking) in an airtight container for up to 3 months. Remove the baked oats from the freezer 24 hours before serving.

Yes, you can make banana bread baked oats breakfast muffins out of this batter. Divide the batter into muffin tins. Full them up for about 2/3 of the batter.
Add 1 tablespoon of cacao powder and some extra chocolate chips to the recipe.
⚖️ Baking in grams
The most accurate way to bake is by baking by weight. Measuring cups are very inaccurate and can lead to baking failures. Therefore all of my recipes are posted in grams. I always bake with a scale, so I have a recipe card that automatically converts metrics to US customary, but it can have errors. So I advise you to bake with a digital scale. - 40 gram rolled oats
- ½ ripe banana
- 50 ml almond milk or other milk
- 1 tsp baking powder
- ½ tsp cinnamon powder
- 2 tbsp dark chocolate chips or chopped chocolate
- 2 tbsp honey or maple syrup to make it sweeter
- 1 egg
- 1 pinch salt optional
- 1 tsp vanilla extract optional
- 1 tbsp chocolate chips optional
Instructions
