This pumpkin banana bread recipe is so easy to make, moist, and very creamy. The combination of pumpkin and bananas is really delicious and also super healthy. The cashew nuts give a little crunch to the mixture. Easy to make, no need for a mixer!

It’s autumn again, which means that pumpkins are available everywhere. I love pumpkin and wanted to make a recipe with it. I had some overripe bananas, so I wanted to make banana bread. So I came up with the genius combination between banana bread and pumpkin bread. It is an easy pumpkin banana bread recipe. You can mix everything in one bowl and no need for a mixer. This banana bread with pumpkin is so easy to make, quick, moist, and very creamy.
The overripe banana makes this recipe sweet and the pumpkin makes the banana bread moist.
It is a loaf of healthy pumpkin banana bread because fresh bananas and pumpkin are used for this pumpkin banana bread. In addition, there are also cashew nuts in the banana bread. You can also add other seeds or nuts to taste if you like.
You can eat this pumpkin banana bread for breakfast, with coffee, or just as a snack.

🍌 What is banana bread?
Banana bread is a type of bread that is prepared from mashed bananas, sugar, water, and wheat (flour). It usually tastes a bit cakey and sweet. The best way to make banana bread is to use overripe bananas (near the browning).
In this recipe, not only banana is used, but also pumpkin. I, therefore, left out 1 banana from my original banana bread recipe and used pumpkin puree instead. Before using the pumpkin, you have to put it in the oven for a while, so that you can make a pumpkin puree from it. Or you can buy a premade pumpkin puree in the supermarket.
🧁 Ingredient Notes
- Unsalted butter: I love to regulate the amount of salt I use for baking, that is why I always use unsalted butter. It also will create the perfect buttery base. Make sure the butter is at room temperature
- Flour: I used all-purpose flour.
- Brown sugar – adds more moisture and sweetness to the recipe. You can substitute it for granulated sugar.
- Bananas – the best is to have overripe bananas for banana bread. The darker the better (brown or black). Overripe bananas make your banana bread sweet and moist.
- Pumpkin – pumpkin puree is used in this recipe. You can buy a premade pumpkin puree or make your own pumpkin puree. Pumpkin makes the banana bread moist.
- Eggs – room temperature
- Salt – adding a pinch of salt enhances the natural flavors of the banana bread.
- Baking soda – chemical leavener. Helps the banana bread rise to tender, moist, and fluffy perfection.
- Pumpkin spice – the perfect spice that matches pumpkin. Don’t you have pumpkin spices? Here is a pumpkin spice recipe so you can make it yourself. For 1 teaspoon of pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg, and 1/8 teaspoon allspice.
- Cashewnuts -optional. For an extra crunch. You can substitute the cashew nuts with other nuts as well.
- Vanilla extract – gives baked goods more taste. Choose a good quality vanilla extract, because that really makes a difference.

How to make pumpkin puree?
You can buy pumpkin puree in the supermarket, or you can choose to make it yourself. I made my own pumpkin puree for this recipe. You will only need two ingredients – pumpkin and salt.
Preheat the oven to 180℃ (350°F). Put 400 grams of pumpkin cubes (from one pumpkin) in an oven dish with a pinch of salt. Place the baking dish in the middle of a preheated oven for 25-30 minutes. Remove the pumpkin cubes from the oven and puree the pumpkin in a food processor, blender, or mash it with a fork.
You can make pumpkin puree in advance. You can store it for a week in the refrigerator and for months in the freezer.
🔪 Step-by-step instructions

Step 1 – Preheat the oven to 350°F (180°C), and butter a 4×8-inch loaf pan. Place a piece of parchment paper in the loaf pan. Whisk the flour, salt, baking soda, and pumpkin spice together in a bowl. Set this aside.
Step 2- In a separate bowl, mash two ripe bananas with a fork to a puree (or put them in a food processor). Add the pumpkin puree to the banana mixture and stir/mash with a fork. Set this aside.
Step 3 – Mix unsalted butter (at room temperature), vanilla extract, and brown sugar in a separate bowl until creamy. Add 2 eggs one at a time to the butter mix and briefly mix it together. Add the flour mixture to the butter mix and stir briefly until everything is smooth. Then add the banana/pumpkin mixture to the butter mixture and stir everything well and mix until smooth. At last crunch 30 grams of cashew nuts, and stir them into the mixture.
Step -4 Spoon the mixture into the loaf pan and place in the middle of a preheated oven. Wait about 45-60 minutes for the banana bread to be ready. Check the doneness of the cake with a wooden tooth stick. Insert a wooden toothpick near the center of the cake. If the toothpick comes out clean, the cake is done.

👩🏼🍳 Expert Tips
- Overripe bananas are best, but if you are in a pinch, you can ripen the bananas by baking them in the oven. Place unpeeled bananas on a baking sheet and bake at 120°C (250°F) until soft, about 15-20 minutes.
- Just like with a cake, you can check whether the banana bread is cooked by pricking it with a skewer. When nothing sticks to it, it is done.
- If the butter is not at room temperature, you can also heat it in the microwave for 30-60 seconds, so that no lumps form in the mix.
🍞 How long can you store pumpkin banana bread?
A covered pumpkin banana bread can be stored in the refrigerator for a maximum of 4 to 5 days. You can also freeze pumpkin banana bread in an airtight container for about 3 months. Remove the banana bread from the freezer 24 hours before serving.
🍂 Pumpkin spice
In other countries, you have special pumpkin spices, with which you can give your pumpkin a delicious taste. Unfortunately, we do not have these herbs ready-made in the supermarket in the Netherlands.
Fortunately, you can imitate these by mixing the following spices together: cinnamon, ginger powder, cloves, allspice, and nutmeg. For 1 teaspoon of pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon nutmeg, and 1/8 teaspoon allspice. Or use gingerbread spices mixed with cinnamon powder as a substitute.
🔪 How do you cut banana bread?
Make sure that the banana bread has completely cooled down before you cut it. The easiest way to cut banana bread is to dip a large chef’s knife in warm water and then dry it. This allows the warm knife to slice through the banana bread. Then repeat these steps every time you cut through the cake.
