Halloween is just around the corner and that includes a delicious treat. These homemade super chocolatey Halloween monster brownies are exactly what you want: tasty, creamy, lots of chocolate, and super easy to make. And they look super cute. These brownies are not only suitable for Halloween, but these brownies are also super fun as a treat at school or for a children’s party. They are kidd-friendly to make.
I made these monster brownies from scratch. But you can also buy a brownie mix and decorate them with a layer of melted dark chocolate, sugar eyes, and chocolate sprinkles. I used brown chocolate sprinkles, but you can also use a different color. Make sure the brownies have cooled completely before decorating. It is best to make the brownies a day in advance so that they are completely cool. It is also nice if you take different sizes of sugar eyes for a playful effect. Unfortunately, I couldn’t find different sizes in the supermarket.

🧈 Ingredient Notes & substitutions
The following ingredients are needed to make these cute Halloween chocolate brownies
- Unsalted butter – I love to regulate the amount of salt I use for baking, that is why I always use unsalted butter. It also will create the perfect buttery base.
- Light brown sugar – sweetens the brownie. The molasses of the brown sugar make the brownie moist and chewy. You can substitute it for dark brown sugar (more caramel taste) or granulated sugar.
- Flour – it adds structure to the brownie. I used all-purpose flour.
- Vanilla extract – gives baked goods more taste. Use vanilla extract not vanilla aroma. Choose a good quality vanilla extract, because that really makes a difference.
- Cacao powder – adds a chocolate flavor to your brownies. You can use dutch processed cacao powder or natural cacao powder. I like the brownies more with dutch processed cacao powder. Use high-quality cacao powder.
- Dark chocolate – I used dark chocolate in the recipe and as decoration. For baking recipes use high-quality chocolate. It really makes a difference in taste. I love using Callebaut Dark Callets.
- Chocolate sprinkles – for decoration. I used only brown chocolate sprinkles, but you can also choose different colors for colorful monsters.
- Sugar eyes – for decoration. Use different sizes for a playful effect.
- Egg – large eggs at room temperature.
- Salt – I use kosher salt. Adding a pinch of salt enhances the natural flavors of the brownie.
Step-by-step instructions
You can find the full recipe for these monster brownies on the recipe card.
- Preheat the convection oven to 165 °C / 330 °F. Grease a 20×30 cm baking dish with butter so that the baking paper does not move. Then put the baking paper in the baking dish and cut away the edges that protrude above the baking dish with scissors.
- Put the butter, granulated sugar, and light brown sugar in a (microwave-safe) bowl. Place it in the microwave for 30 seconds and stir to combine. Repeat this 2 more times. Let it cool down for a while.
- Add the eggs and egg yolk one by one, making sure to mix in between each time before adding the next egg.
- Add a pinch of salt, baking soda, and vanilla extract to the brownie mix. Sift the cocoa powder and flour over the brownie mix. Mix all this with a mixer or a whisk. Finally, add the dark chocolate callets.
- Bake it for 35 minutes in the preheated oven. After that, insert a toothpick in the center of the brownie, when it comes out clean then the brownies are done. Don’t worry if the brownie still feels soft when it comes out of the oven, this will make the brownies much gooey when it cools down (less dry).
- Wait until the brownies have cooled down completely (minimum of 30 minutes). When they have cooled down you can start decorating the brownies
🔪 How do you cut a brownie?
The easiest way to cut a brownie is to wait until the brownie is completely cooled down. It will decrease the chance that the brownie will fall apart while cutting the brownie. You can also use a measuring staff to cut the brownies into equal pieces.
Grab a large kitchen knife, and drop it under hot water. Dry it with a towel and start cutting the brownies into equal pieces. Repeat these steps every time you want to cut into the brownies.
Decorate Halloween brownies
Now you can go to the fun part – decorating! Wait until the chocolate brownies have cooled down completely before decorating. Otherwise, the decoration won’t hold.
- Melt the chocolate. You can do this by placing the chocolate in a microwave-safe bowl and heating it up for about 60 seconds or melting it au bain Marie. Place the melted chocolate in a container large enough to dip a piece of brownie in.
- Put the chocolate sprinkles in a large bowl large enough to dip a piece of brownie in. Place baking paper on a cutting board to allow the decorated brownies to cool.
- Dip the brownie in the melted chocolate. Run a fork over the brownie, making sure the chocolate is evenly distributed throughout. Remove the brownie from the melted chocolate with a fork and place it in the sprinkles container. Spread the sprinkles evenly over the brownie piece.
- Place sugar eyes on the brownie. Place the brownie on the baking paper and place two or more sugar eyes on the brownie. Repeat these steps several times until all brownies are decorated and you have cute Halloween monster brownies.

👩🏼🍳 Expert tips
- Bake in grams – Use a kitchen scale to weigh your ingredients instead of using measurement cups. A kitchen scale is more accurate.
- Heat up – you can also warm up a brownie in the oven before eating, a warm brownie is always the best.
- Don’t open the oven door for the first 25 minutes. Opening the door will ruin your brownie.
- Doneness – Do the toothpick test to see if your brownies are done. Don’t bake the brownies for too long otherwise, they will become dry. And then they will lose their fudginess.
- Quality ingredients – for simple recipes use high-quality ingredients that give that extra flavor to your bakings. Use high-quality chocolate, cocoa powder, butter, and vanilla extract.
🍰 Storage
Have you baked too many brownies? Don’t worry. You can store these chocolate brownies for up to 7 days. Wrap them with aluminum foil or cling film, so that no air gets into them. Do NOT keep the brownies in the refrigerator, as they will dry out there. Preferably keep them in a cold and dark place, such as a kitchen cabinet.
You can also freeze undecorated brownies if you wrap them per portion in aluminum foil or cling film. You can store brownies in the freezer for up to 3 months.
❓FAQ
No, you don’t. You can also buy brownies or a brownie mix if you don’t want to make them yourself. But I recommend you to make them from scratch because they taste amazing. If you decide to buy brownies you can follow the steps on how to decorate them to become monster brownies.
⚖️ Baking in grams
The most accurate way to bake is by baking by weight. Measuring cups are wildly inaccurate and can lead to baking failures. Therefore all of my recipes are posted in grams. I always bake with a scale, so I have a recipe card that automatically converts metrics to US customary but can have errors. So I advise you to bake with a digital scale. You can find them on Amazon for a small price.
