Ingredients
  

Wet ingredients

  • 150 ml buttermilk
  • 1 egg
  • 2-3 tbsp Lotus Biscoff Spread

Dry ingredients

  • 125 grams all-purpose flour
  • 15 grams sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch of salt

Filling

  • 6 tbsp Lotus Biscoff spread

Topping

  • Lotus Biscoff spread
  • 3 Lotus Biscoff Cookies crumbled

Instructions
 

  • In a mixing bowl, combine the flour, sugar, baking soda, baking powder, and salt. In a separate bowl, whisk together the buttermilk, egg, and melted butter. Gradually add the wet ingredients to the dry ingredients and mix until it is combined really well. The secret is to don't overmix.
    150 ml buttermilk, 125 grams all-purpose flour, 15 grams sugar, 1 tsp baking powder, ½ tsp baking soda, pinch of salt, 1 egg
  • Heat a non-stick skillet over medium heat. Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

  • Garnish your pancakes with your favorite toppings. Top the stack with more Biscoff spread (heat it up in the microwave for 20 sec) and sprinkle crushed Biscoff cookies on top for an extra crunch.

Notes

If, by some miracle, you have any leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, simply pop them in the microwave for a few seconds or warm them in the oven at a low temperature.
