Strawberry sauce

  • 500 grams strawberries cleaned
  • granulated sugar
  • 70 ml Licor 43

Tiramisu filling

  • 3 eggs room temperature
  • 500 ml mascarpone softened
  • 250 ml heavy cream
  • 200 grams ladyfingers or Savoiardi biscuits
  • powdered sugar

Strawberry sauce

  • Start by making the strawberry sauce. Clean the strawberries by removing the green leaves and stem. Rinse them under cool running water and pat them dry with a clean towel. Reserve 6 to 8 strawberries for decoration, and slice them thinly.

  • Blend the remaining strawberries with granulated sugar and Licor 43 in a blender or electric mixer until smooth. If you prefer not to use alcohol, you can skip the Licor 43. Set the sauce aside.

Tiramisu

  • Separate the egg whites from the yolks. Whip in a mixing bowl the egg whites with an electric mixer until they reach a stiff consistency. No trace of yolk should be present when whipping the egg whites to stiff peaks. Set them aside and use as needed.

  • In a another bowl, whisk the egg yolks with powdered sugar until they are light and smooth, which should take around 3 to 5 minutes.

  • To make the mascarpone cheese softer, pour it into a bowl and work it with a spoon. Use high-quality, creamy, and thick mascarpone cheese. Once the egg yolks are ready, add the mascarpone cheese. Whip it slowly with an electric mixer for 2 to 3 minutes to create a smooth mascarpone cream.

  • Once it's whipped to the desired consistency, incorporate the stiffly beaten egg whites into the mascarpone mixture. Using a wooden spoon, mix the ingredients slowly from the bottom up until they become smooth and creamy.
  • Briefly dip the ladyfingers (1 or 2 seconds) into the strawberry sauce before placing them into your preferred casserole dish or glass. Avoid over-soaking the ladyfingers in the strawberry sauce as it can result in a runny texture.
  • Arrange the ladyfingers in a single layer at the bottom of the casserole. Spread the mascarpone cream over the ladyfingers. Repeat the layering process until you reach the top of the dish, ending with a layer of mascarpone cream.
    For an individual serving, start by placing a tablespoon or two of mascarpone cream in the bottom of your glass. Take a ladyfinger and break it into four pieces. Dunk the ladyfinger pieces into the strawberry sauce. Place the soaked ladyfinger pieces on top of the mascarpone cream.
    Repeat the layering process until you reach the top of the cup, ending with a layer of mascarpone cream.
  • To decorate the tiramisu, place fresh strawberries and mint on top. For an optional touch, sprinkle some white chocolate chips over the strawberries and mint.
    Chill in the refrigerator for at least three hours before serving. For even better flavor and consistency, consider preparing the dessert the day before and letting it rest overnight.
